Nihari Background
Place of origin:
Indian Subcontinent
The story:
Nihari is actually a Delhi-based dish that is served steaming hot. History suggests the birth of nihari in Jama Masjid, Delhi in the latter half of the 18th century during the decline of the Mughal Empire. It was served to the warriors/defenders or emperors after the Fajar prayer, where their night duties were called off. Who would eat this fulfilling meal and then sleep till Zuhr prayers to retain their energy levels. Legends suggest that later on, it became the favorite dish for emperors to consume in the morning after dawn breaks, eaten by Nawabs in the Mughal Empire as a breakfast item after their morning prayers.
Conclusion:
These days anyone can cook nihari with the recipe masala mix packages available with different labels. Still, the original taste that comes out, when it's cooked in a cauldron fixed in a tandoor is out of this world. No recipe mix can match that taste.
